{"id":212,"date":"2018-04-08T21:47:49","date_gmt":"2018-04-08T21:47:49","guid":{"rendered":"https:\/\/wholeselfnutrition.com\/?page_id=212"},"modified":"2018-04-08T22:02:15","modified_gmt":"2018-04-08T22:02:15","slug":"cilantro-lime-cauliflower-rice","status":"publish","type":"page","link":"https:\/\/wholeselfnutrition.com\/?page_id=212","title":{"rendered":"Cilantro Lime Cauliflower Rice**"},"content":{"rendered":"<p><span style=\"font-size: 14pt;\">Cauliflower is rich in vitamins, minerals, fiber and phytonutrients and is a great food to include in an anti-inflammatory whole food diet.\u00a0 \u00a0This Cauliflower Rice is a big hit in my home even with my little ones, give it a try!<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-size: 14pt;\">Makes 5 to 6 servings<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">Prep and Cook time:\u00a0 20 minutes<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">1 head cauliflower, cut into florets<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">2 tablespoons avocado, olive or coconut oil*<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">1 or 2 garlic cloves, minced<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">2 tablespoons freshly chopped cilantro<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">2 tablespoons lime juice or the juice of one fresh squeezed lime<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">1 tablespoon freshly chopped flat-leafed parsley<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">1 teaspoon sea salt (or to taste)<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">1\/2 teaspoon dried oregano<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">Black pepper to taste<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">*if you don&#8217;t cook with oil you can use water or broth.\u00a0 Grass fed butter may also work.<\/span><\/p>\n<ol>\n<li><span style=\"font-size: 14pt;\">\u00a0Add half of the florets to a food processor or blender and pulse a few times, you want it to have a &#8220;rice-like&#8221; consistency so be careful not to overdo it.\u00a0 Place in a small bowl and repeat with the rest.\u00a0 I use a blender so half the head of cauliflower is too much so I end up doing multiple small batches.\u00a0 \u00a0<span style=\"font-size: 12pt;\"><strong><span style=\"color: #800080;\"><span style=\"font-family: 'comic sans ms', sans-serif;\">Convenience tip:<\/span>\u00a0<\/span><span style=\"font-family: 'comic sans ms', sans-serif; color: #800080;\"> they sell cauliflower rice in the vegetable department as well as in the frozen vegetable section, this is good to have on hand for those busy nights when you need to throw together a quick and healthy dinner.\u00a0 Though I prefer to use fresh it is also helpful to keep\u00a0already minced garlic on hand it is great in a pinch.<\/span><\/strong><\/span><\/span><\/li>\n<li><span style=\"font-size: 14pt;\">Add the cauliflower to a large saute pan with oil and garlic.\u00a0 Saute on medium heat for about 5 minutes, until the cauliflower is toasted and slightly browned.\u00a0\u00a0<span style=\"font-size: 12pt;\"><strong><span style=\"font-family: 'comic sans ms', sans-serif; color: #800080;\">Tip:\u00a0 We have noticed in our house that 5 minutes is not long enough to get the toasted brown consistency&#8230;you may need more time depending on your preference but make sure to keep an eye on it.\u00a0\u00a0<\/span><\/strong><\/span><\/span><\/li>\n<li><span style=\"font-size: 14pt;\">Place the cauliflower in a large serving bowl and add the remaining ingredients.\u00a0 Mix well.<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">Serve hot and enjoy!\u00a0 Lasts 4-5 days in the fridge but won&#8217;t freeze well.<\/span><\/li>\n<\/ol>\n<p><span style=\"font-size: 14pt;\"><strong><span style=\"color: #800080;\"><span style=\"font-family: 'comic sans ms', sans-serif;\">Serving Tip:\u00a0 this is excellent with avocado slices on top.\u00a0 We use it often instead of rice with Mexican style shredded chicken in a salad with beans and salsa.\u00a0 Yummy.<\/span><\/span><\/strong><\/span><\/p>\n<p><span style=\"font-size: 12pt; font-family: 'comic sans ms', sans-serif;\">**Recipe from Easy.
