Plant-based family and friend approved too!<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">Ingredients:<\/span><br \/>\n<span style=\"font-size: 14pt;\">&#8211; 1 acorn squash<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">&#8211; 1\/2 tbsp olive oil<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">&#8211; 1 tbsp pure maple syrup<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">&#8211; 1 tbsp Grass-Fed butter (or Earth Balance plant-based &#8220;butter&#8221;)<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">&#8211; 1\/4 cup combination chopped walnuts &amp; dried cranberry mixture<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">&#8211; 1\/2 tsp cinnamon<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">&#8211; 1\/4 tsp nutmeg<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">&#8211; 1\/4 tsp raw brown sugar<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">Directions:<\/span><br \/>\n<span style=\"font-size: 14pt;\">-Cut acorn squash in half and scoop seeds from the middle.<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">-Pre-heat oven to 425 degrees.<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">-Brush freshly scooped squash halves with olive oil and place on baking sheet.<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">-Sprinkle seasonings (cinnamon, brown sugar, nutmeg) on top.<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">-Bake at 425 degrees for approximately 45 minutes to an hour, until squash looks cooked<\/span><br \/>\n<span style=\"font-size: 14pt;\">through and softened.<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">-To avoid overcooking the nuts and cranberries, do not add these until you<\/span><br \/>\n<span style=\"font-size: 14pt;\">remove squash from oven.<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">-Melt butter in a saucepan and gently cook\u00a0walnuts and cranberries until slightly tender.
