Coconut Mango Quinoa

Ingredients

  • 1 c quinoa 
  • 2 tsp coconut oil
  • 1 c organic kale
  • ½ c coconut milk
  • ½ c mango

Directions

  • Cook quinoa, then saute it with coconut oil, coconut milk, and kale together in a skillet until kale starts to wilt. Top with fresh mango and sprinkle with black pepper to taste

Tips

  • Substitute spinach for kale, almond milk for coconut milk, and papaya for mango depending on your taste preferences 
  • Can use pre-made quinoa
