Ingredients
- 1 c quinoa
- 2 tsp coconut oil
- 1 c organic kale
- ½ c coconut milk
- ½ c mango
Directions
- Cook quinoa, then saute it with coconut oil, coconut milk, and kale together in a skillet until kale starts to wilt. Top with fresh mango and sprinkle with black pepper to taste
Tips
- Substitute spinach for kale, almond milk for coconut milk, and papaya for mango depending on your taste preferences
- Can use pre-made quinoa
