Prep and Cook Time: 40 minutes
Makes 4 servings
Ingredients
- 2 c old fashioned oatmeal
- 1 tsp cinnamon
- ½ tsp ground ginger
- ¼ tsp nutmeg
- 1 tbs coconut oil
- 1 egg
- 3 tbs honey
- 1 ½ c almond milk
- 1 c fresh blueberries or berry of your choice
Directions
- Preheat oven to 350 degrees
- In a mixing bowl, stir all dry ingredients until combined
- In a separate bowl, whisk together coconut oil, egg, honey, and milk
- Combine wet and dry ingredients
- Fold in berries with spatula
- Pour batter in 8×8 greased pan – it will look like there’s too much liquid but it will adsorb
- Bake 35-40 minutes, until top is golden brown and milk is completely adsorbed
- Enjoy warm or cold, store in refrigerator for 4-5 days or freeze for up to 3 months
Tips
- Can use any milk and fruit you prefer
- Can add chopped nuts for additional flavor and nutrients
- Make gluten free with gluten free certified rolled oats
- Make vegan by substituting egg and honey for flax egg and maple syrup
- Optional toppings: yogurt, drizzled honey, or additional fresh fruit
